No Recipe Grilled Cheese

Grilled cheese is one of the easiest dishes to make and one of the most delicious. I mean who doesn't love bread, cheese and butter?! It's also pretty straight forward how to make one. You need bread, cheese and butter/mayo. For me there are 2 different ways to make a basic grilled cheese:

Number 1: 2 slices of bread, add cheese and butter or mayo on the outside of the bread slices. Cook it on the griddle or non-stick pan. Cook until bread is golden brown. Voila! That's it!

Number 2:  2 slices of bread, slather mayo inside, add cheese and butter or mayo on the outside of the bread slices. Cook it on the griddle or non-stick pan. Cook until bread is golden brown. Ta-da! That's it!

It really is quite simple. You can use whatever cheese you want, any bread you want and add any extras that you love. Grilled cheese is one of the most versatile sandwiches. It definitely is a comfort food! Enjoy it with a delicious Roasted Tomato Soup. Grilled cheese and tomato soup, it's a classic!

This one I used Kraft singles cheese. It melts so amazingly!

This one I used cheddar. I added mayo on the inside.

Cheese filled!

Butter or mayo outside of bread. Mayo is good substitute for butter, if you're out. It helps make a golden brown sandwich.

Put them on a griddle until both sides are golden brown.

Cut in half, diagonally or in sticks. Enjoy alone or with a cup of tomato soup!


No recipe- Basic Grilled Cheese - 2 sandwiches

4 slices of bread (any kind)
2 Tbsp butter
2 tbsp mayo (optional)
4 slices of cheese (any kind)

Road Map:

Number 1: 2 slices of bread, add cheese and butter or mayo on the outside of the bread slices. Cook it on the griddle or non-stick pan. Cook until bread is golden brown. Voila! That's it!

                                                                   OR

Number 2:  2 slices of bread, slather mayo inside, add cheese and butter or mayo on the outside of the bread slices. Cook it on the griddle or non-stick pan. Cook until bread is golden brown. Ta-da! That's it!

Corn Bacon Casserole


One of my favorite potluck dishes that's always a big hit is my Corn Casserole. It has been requested on several family gathering. It is a very very simple casserole. It is a 5 ingredient dish; can of corn, creamed corn, sour cream, butter and Jiffy corn mix. You drop it in a bowl and mix, pour into a 9x13 dish, bake at 350F for 45 minutes & you're done! It's a no-brainer! The outcome is this creamy delicate corn delight.

The casserole is delicious as is, but I was thinking what if I add bacon to the mix. Bacon can only enhance this deliciousness. So that's what I did and boy does it work! The salty bacon plays well with the sweet corn. It's a balanced bite of salt & sweet.

I've made both versions, one with bacon and without. Both are a hit! You can't go wrong!!

The Yummy Suspects!

Delicious crisp bacon, divided into 2 piles.

Into a medium bowl pour can of drained corn,

can of creamed corn,


8oz of sour cream, 

 2 oz of melted butter (1/2 a stick)

and then Jiffy corn mix.

Stir until it looks like....

...this.

Add 1/2 of the bacon and

stir to combine.

Pour into a 9x13 casserole, smooth out with spoon and gently shake and tap casserole to settle and even out mixture.

Crumble and sprinkle the other half of bacon. Bake for 40-45 minutes. Put toothpick in and if it comes out clean it's ready.

Put oven to broil and brown casserole for 1-2 minutes. Watch carefully don't let it burn! Take it out when golden brown.

Let it set for 5 minutes. Serve warm or room temperature. Delicious creamy, sweet and salty! So good!!!

Corn Bacon Casserole - 5-7 servings

1- 15.25 oz can whole corn kernels, drain
1- 14.75 oz can creamed corn
8 oz sour cream
2 oz butter, melted (1/2 a stick)
1- 8.5ox box of favorite corn mix (Jiffy is my brand)
4-5 thick cut bacon, chopped (I use applewood bacon)

Note: If you cook in a smaller casserole your cooking time will be longer, 50-60 minutes. Test doneness with a toothpick. It comes out clean your casserole is ready. Then broil until golden brown for 1-2 minutes.


Road Map:

1. Preheat oven to 350F. Chop bacon and place in a dry skillet on medium heat. Crisp up bacon bits and drain on a paper towel. Divide bacon in half.

2. Place drained corn kernels, creamed corn, sour cream, butter and corn mix in a medium bowl and mix until well combined. Add half of the bacon and mix until combined.

3. Pour mixture into a 9x13 pan. Smooth out with the back of a wooden spoon. Gently shake and tap the casserole dish to help the mixture settle and even out. Crumble and sprinkle the half of bacon over casserole.

4. Place casserole into the oven, cook for 40-45 minutes, until toothpick comes out clean. Turn oven to Broil and cook until brown, 1-2 minutes. Watch carefully, will brown rapidly you don't want it to burn.

5. Once golden brown, place casserole on a trivet to rest for 5 minutes. Serve warm or room temperature.

Grilled Sloppy Pimento Joes


Sloppy Joes are an easy quick fix weekday meal. It's so tasty, so simple and so quintessentially American. We love our Sloppy Joes, I always have the ingredients on hand. Tonight, I wanted to do something a little different. I not only wanted a grilled sandwich but I wanted it to be a grilled cheese sandwich. Sharp Cheddar, Sharp White Cheddar, Blue Cheese all good choices. But I decided to go a more Southern route, Pimento Cheese.

At the moment I'm a little obsessed with pimento cheese. I can't believe how ridiculously good it taste! I know it's not the best for you, but everything in moderation. So for this deliciousness, I took my favorite bread, the undisputed King of Breads (at least in my house), Sourdough! Being a San Franciscan, sourdough is in my veins. I love it over any kind of bread. It's amazing!! I took these marvelous bread slices spread a generous amount of pimento cheese, add some sloppy joe, closed it up and grilled to buttery toasted nirvana! It is crazy good. You get the saltiness and ooey gooey of the cheese and the sweet/tangy/ messy part of the joe, and oh my goodness!!!! I was so happy!

I hope you do the happy dance after trying this grilled cheese!

Grilled Sloppy Pimento Joes - 4 servings

Ingredients:

1lb ground beef
1/4 of a large onion, diced
1 garlic clove, grated
1 8oz can tomato sauce
1 cup beef broth
1/4 cup brown sugar, packed
1-2 Tbsp McCormick Steak Seasoning (or your favorite steak seasoning)
1-2 Tbsp Worcestershire Sauce
1-2 Tbsp Olive Oil
1/2 cup Pimento Cheese, use my recipe!
8 slices of Sourdough bread
1- 2 Tbsp melted butter for grilling
Salt n Pepper



Saute on medium heat onions and garlic until soft, 4-5 minutes


Crumble, add steak seasoning and salt. Cook until it looks like.....

....this, brown bits!

Add Worcestershire sauce and using a wooden spoon scrap the bottom of the pan to get the flavor bits.

Add 8oz can of tomato sauce and add salt, season to taste.

Use the tomato can to measure 8 oz of beef broth.

Add 1/4 cup packed brown sugar.

Stir until well blended. Lower heat and cover. Simmer for about 10 minutes until sauce thickens.

Meanwhile, butter all the bread, flip and slather pimento cheese on all the bread.

Add sloppy joe on one side and close with another piece.

Place on a preheated griddle and cook until golden brown.

Flip cook other side.

Let it stand for a minute then cut in half.

Ready to Eat!!!

Road Map:

1. Add oil to a medium heavy bottom pan on medium heat. Dice a quarter of an onion and place in hot pan, grate garlic, add salt & pepper and stir until onions are soft, 4-5 minutes.

2. Once onions are soft crumble in ground beef, add steak seasoning and salt. With a wooden spoon crumble beef and let it caramelize to beautiful brown bits. Add Worcestershire sauce and using a wooden spoon scrap the bottom of the pan to get the flavor bits.

3. Once beef is browned, add tomato sauce, beef broth & sugar. Stir until combined, lower heat and let it simmer for 5 minutes until mixture thickens. Check for seasoning. Add more salt or sugar if needed.

4. Place a griddle on medium heat. Brush melted butter to all 8 slices of bread. Turn over and slather pimento cheese on all 8 slices. Add about 1/4 cup or less of sloppy joe, close it with another bread, put on the grill.

5. Grill until golden, 2 - 4 minutes each side. Let it rest for about a minute & cut in half. Enjoy!!
