Happy 4th of July!!! - Steak & Potato



Happy 4th of July everyone!


For years my parents enjoy going to Half Moon Bay to enjoy the Pancake Breakfast (donations go to the Lions Club) and the annual parade.  For the past few years my husband and brothers have joined my parents and enjoyed the time with them. The main street is Classic Americana. Many mom and pop stores and beautiful building murals. All the different community organizations participate by dressing in costumes, decorating a vehicle or two and throwing candy to the crowd. It's All American Day.


I love this day. It's our Country's 238th birthday! Our country battled so heroically to gain our freedom. It a day to honor & remember those valiant men & women who sacrificed their lives for God and Country. God Bless America!

Today we're going to have an All American treat Steak & Potato. We are meat eating people and nothing is better than a thick juicy piece of Rib-Eye. The meat is so succulent! The best rib-eye is bone-in. The bone imparts an extra boost of flavor. Along side our trusted steak I'm serving mash potatoes. I love mash potato! When done right, they are these luscious buttery pillows of heaven. I make mash with any potato and also keep the skin on. I like the texture.

Seasoning the steak is very important. It's the first step to ensure a flavorful mouthful of meat. I'm stealing a trick from Michael Symon (Iron Chef) and added a bit of sugar to my dry rub and seasoning these steaks overnight in the refrigerator. Delicious!

The potato are very start forward: potato, milk, salt, pepper, and lots of butter! I once heard a French chef say that the best way to make mash potato is to do equal parts potato lb to butter lb. I'm not putting that much butter, but can you imagine how ridiculously good those spuds would be!!

Grilled Rib-eye Steak - Yield 4-6 servings
Ingredients:

4 Rib-eye Steak
4 Tbsp Kosher Salt
2 Tbsp Sugar
2 Tbsp Montreal Seasoning (McCormick's)
2-3 Tbsp Olive Oil

 Side-note: You can change your spices, herbs how ever you like. Don't be afraid to mix it up!

Instructions:

1. Make dry rub, combine salt, sugar & Montreal seasoning.

2. Rub in the dry rub on the front & back of each steak. (Overnight is best but 2 hours is okay)

3.  Drizzle olive oil on steaks. Grill steak on prepared outdoor grill or indoor grill.

4.  For medium-rare, grill 3 to 5 minutes per side. Remove from the grill and rest, uncovered, for 10
     minutes. 

5. Eat!!!  


Simply Delicious Mash Potato

Ingredients:

4-5 lbs Russet potatoes, cubed with skins (or your favorite kind)
1-2 sticks of butter, softened
1/2 cup Milk
Salt to taste
1 tsp black pepper


Side note: This is a simple mash, but you could totally add a merry of other flavors, garlic, rosemary,
 sour cream, chives, bacon just for starters. Go wild!

Instructions:

1. Cube potatoes, leave the skins on. Place potato in a pot of cold water and place pot on medium
    heat.  When pot comes to a boil add salt to the water. This is an excellent time to season the
    potatoes.

2. Once the water has come to a rolling boil lower heat to medium. Cook for 20 - 25 minutes or until
   
fork tender.

3. Drain potatoes and return to pot. Mash and add butter, milk, salt, pepper. Stir. Test and adjust the
    seasonings. 

4. Enjoy!!
